Winemaking Notes: The Chardonnay forthis Blanc de Blancs was harvested from the Sta. Rita Hills at verylow sugars and high acidity with the intention of making. a bright, crisp, and enjoyable sparkling wine. The base wine was fermented in older French oak barrels and then re-fermented in the bottle using the traditional method. It was age dentirage for over one year prior to being disgorged.
