Vineyards and Composition: 100% Fox Family Vineyard Grenache; Los Olivos, Santa Barbara County.
Barrel Aging and Cooperage: 6 months in five year old French oak (Boutes and Sirugue).
Winemaking: The 2020 Foxy Bubbles were disgorged, given their dosage, capped and labeled a few days ago after resting in bins on their secondary fermentation lees for twenty-three months. The lees add complexity and give the sparkling Grenache rosé a nice biscuity aroma and flavor to go along with the beautiful fruit flavors of strawberry, cranberry and raspberry. Disgorging is the most difficult procedure in sparkling winemaking. This is where the caps are popped releasing the yeast after carefully riddling the bottles for over a week. Every bottle has been touched at least 10 times from bottling, riddling and disgorging! It is an extremely time consuming and painstaking process, but I hope you enjoy the fruits of our labor! The Grenache grapes for this sparkling wine were picked from our organically grown, hand-farmed estate vineyard at low sugars with a low pH and beautiful natural acidity. The grapes were destemmed, crushed, pressed and settled before being racked into neutral French Oak for fermentation and aging. The wine was fermented at low temperature for a long, cool fermentation. It was racked from barrel and re-inoculated for secondary fermentation in the bottle in May of 2021. This wine has a gorgeous light pink color and will make a wonderful aperitif or be a beautiful addition to any celebration.
