Pinot Noir is one of the most noble grape varietals in the world with the longest history in Burgundy. It is located in the cool Santa Rita Hills and the vines are planted in ancient seabed. The vines struggle to survive in this environment but produce cool climate Pinot Noir with intense flavors and aromas. These grapes were 70% destemmed with 30% whole-cluster, without being crushed, into a small 1.5ton fermentor and foot stomped or punched down during fermentation. This wine was aged in 100% French Oak for 16 months and has gorgeous red and dark fruit aromas and flavors that make it easy to enjoy on its own or pair with your favorite pork preparation.
