Vineyards and Composition: 100% Chardonnay from Mormann Vineyard, Sta. Rita Hills AVA
Barrel Aging and Cooperage: 6 months in older French oak barrels
Winemaking Notes: The Chardonnay grapes picked for this Blanc de Blancs sparkling wine were grown in very sandy soils at the Mormann Vineyard in the very cool Sta. Rita Hills. This wine was bottled for secondary fermentation, Methode Champenoise, in March of 2017 after being fermented and aged in older French oak for six months. It then rested on its fermentation lees for an additonal four years prior to being disgorged, given a 6g/L dosage and topped in summer of 2021. Disgorging is the most difficult procedure in sparkling winemaking. This is where the caps are popped releasling the yeast plug after carefully riddling the bottles for a week. Every bottle has been touched at least 10 times from bottling, riddling, disgorging and labeling. It is an extremely time consuming and painstaking process, but I hope you enjoy the fruits of our labor! This sparkling wine has persistent bubbles with bright fruit, rich nuttiness and a creamy, fresh finish with beautiful acidity. It will make a wonderful apertif or be a beautiful addition to any celebration!
