Winemaking: Every year, we look so forward to release the Linger. This is our most limited wine that we make almost exclusively for our wine club. Only two barrels are used to make this opaque, silky powerhouse: our best barrel of Syrah and our best barrel of Petite Sirah all from our estate vineyard, Fox Family Vineyard. With only 49 cases of this 50/50 blend, we never pour it in the tasting room, but keep all of the bottles for our Linger fans to enjoy with family and friends. With its bold palete and long finish, this is a wine that could be savored now, but will really shine with a few years resting in the bottle. But beware, this wine does sell out quickly! Is it the Syrah or the Petite Sirah that makes you want to Linger over another bottle?
The vineyard is densely planted, organically grown and farmed entirely by hand in the hills of Los Olivos. The steep slopes and rocky/shale soils lead to very light yields in the 2.5 tons/acre range with extraordinary concentration and purity of fruit. My goal with this wine is to select what I feel are the best single barrel of 470 clone Syrah and "Rockpile" clone Petite Sirah from my vineyard in Los Olivos. These grapes are hand harvested, hand sorted, mostly destemmed without being crushed, leaving approximately 90% whole berries. The musts were cold-soaked for 4-5 days, with the addition of dry-ice, prior to inoculation and punched down by hand one to three times per day until fermentation was complete. The free run juice was drained off and the remaining must was basket pressed and settled before being racked to French oak barrels for aging. This wine was aged in barrel for an additional twenty-eight months prior to being racked from barrel, blended and bottled in late February of 2022. This wine is aged for two and a half years in barrel and an additional year and a half in bottle with the intention on being drinkable upon release but it should also age for at least another decade if not two!
