Vineyards and Composition:  100% Pinot Noir grown behind Mormann Vineyard, Sta. Rita Hills AVA

Barrel Aging and Cooperage: 6 months in older French oak barrels

Winemaking Notes:  The Pinot Noir grapes picked for this Blanc de Noirs sparkling wine were grown in very sandy soils right behind the Mormann Vineyard in the very cool, Sta Rita Hills.  These Pinot Noir grapes were pressed whole-cluster like a white wine for a very short duration as to not extract any color from the dark skins.  It was also picked at very low sugars with very high acidity, much earlier than you would pick Pinot Noir for red wine.  This results in a sparkling wine with relatively no color.  It was bottled for secondary fermentation Methode Champanoise in March 2018 after being fermented and aged in older French oak barrels for six months.  It then rested on its fermentation lees for an additional three years prior to being disgorged, given an 8g/L dosage and topped in the summer of 2021.  This sparkling wine has a little more body than the Blanc de Blancs with persistent bubbles, red apple, light cherry, fresh baked bread, mouth-watering acidity and a creamy, rich finish.
