Winemaking: 2015 was an early, small, drought induced vintage resulting in wines with voluptuous texture and weight with fresh, bright acidity and gorgeous purity of fruit. “The Dare” was blended and named in honor of my daughter, Rylee Dare. The grapes were all hand harvested, sorted and predominately destemmed without crushing, leaving approximately 90% whole berries. After a 4-6 day cold soak, the grapes were punched down by hand one to three times per day until fermentation was complete. The must was basket pressed and settled before being racked to barrel for aging. This wine was blended and bottled in late January of 2018 after being aged in exclusively French oak for twenty-six months.
